We create seasonal menus with a vegetarian base and use animal proteins that do not consume large amounts of resources so we minimize our impact on the planet. Part of our goal is to create networks of farmers that allow us to guarantee a sustainable product. We believe in a conscious diet whose principle is to recognize where what we consume comes from.
